Smoke Gets in your Eyes!

  I fired up the smoker with some hardwoods! The beginning of Smoke gets in your eyes Dinner. Decided to do a Beef Brisket and some mild Italian sausage. I've enjoyed smoking meats for as long as I can remember and that's a long time! There is nothing better than the smoky flavor that hardwoods add to a juicy tender piece of Beef Brisket! I've got a nice easy recipe for the Brining and the dry rub for the Beef Brisket! I'll include that later in this post!


  Next, I have to decide who is attending this Dinner. There is always planning that has to be done so that there is enough for everyone who attends. The number always is easiest at around six to eight people! That seems to go well,because of how much space you have for a sit down dinner! Once determined, the fun begins.












  The menu is simple,meat...well I have a few easy sides to go with meat! First a starch that goes well is rice. I'm going to make a spicy risotto...easy! Need something with some flavors thats on the vegetables side of things....Sauteed sweet onions and mushrooms are good with the Beef Brisket!





 


As you can see the, guest enjoyed the meal of Smoked Brisket and mild Italian sausage, with the sauteed mushrooms, onions and spicy risotto.  I'm working on putting the recipe down on paper and to the blog! Some days I can't seem to get it all done! LOL!
